Fried Mullet Chinese Style
Ingredients per 1000g (1 kg) of meat
| mullet | 453 g | 1 lb |
| scallions, finely chopped | 4 | 4 |
| fresh ginger, finely chopped | 1/2 piece | 1/2 piece |
| Soy sauce | 1 Tbsp | 1 Tbsp |
| sherry wine | 2 Tbsp | 2 Tbsp |
| water | 1/2 cup | 1/2 cup |
| salt and pepper to taste | ||
| peanut oil, for shallow frying | 1/2 cup | 1/2 cup |
| Sherry wine | 2 Tbsp | 2 Tbsp |
| cornstarch, as needed |
Instructions
- Wet the fish with soy sauce on both sides and fry in hot oil, 3 minutes each side.
- Add the chopped ginger, scallions, sherry wine, water, salt and pepper to the fish. Cover and simmer for 15 minutes.
- Place fish on a hot plate and pour the sauce over it. If the sauce is too thin, mix some cornstarch with cold water (1:3) and stir it in, until the sauce thickens.
