Fried Mullet Chinese Style

Ingredients per 1000g (1 kg) of meat

mullet 453 g 1 lb
scallions, finely chopped 4 4
fresh ginger, finely chopped 1/2 piece 1/2 piece
Soy sauce 1 Tbsp 1 Tbsp
sherry wine 2 Tbsp 2 Tbsp
water 1/2 cup 1/2 cup
salt and pepper to taste
peanut oil, for shallow frying 1/2 cup 1/2 cup
Sherry wine 2 Tbsp 2 Tbsp
cornstarch, as needed

Instructions

  1. Wet the fish with soy sauce on both sides and fry in hot oil, 3 minutes each side.
  2. Add the chopped ginger, scallions, sherry wine, water, salt and pepper to the fish. Cover and simmer for 15 minutes.
  3. Place fish on a hot plate and pour the sauce over it. If the sauce is too thin, mix some cornstarch with cold water (1:3) and stir it in, until the sauce thickens.
