Smoked Mullet Spread
Smoked mullet makes an excellent fish spread. Making mullet spread offers many advantages:
- You get more product when smoked mullet is made into a spread.
- Mullet spreads taste phenomenal.
- Smoked fish spread is very expensive to buy yet it costs very little to make.
- Spreads are easy to make.
- Spreads freeze well.
The following ingredients will produce excellent spreads and dips:
Ingredients: butter, cream cheese, sour cream, plain yogurt, mayonnaise, and avocado pulp. They can be added on their own or mixed together. It makes little difference whether you use plain yogurt or sour cream.
Flavorings: pepper, onion, garlic, cayenne, chives, parsley, dill, lime or lemon.
Smoked fish trimmings should account for at least 50% of the total ingredients. More trimmings will impart a stronger smoke flavor. Through different ingredients you can influence the flavor and color of a spread. For example, in curry spread the color is yellowish due to the "turmeric" spice which is always present in curry mixtures. If you add more turmeric the color will be a stronger yellow. Paprika may be added and the color will turn reddish. It depends on the flavor and look that you are going for and what you want to eat.
