Salmon Pâté with Heavy Cream

Smoked fish such as salmon, trout, mullet and mackerel can be used for making wonderful pâtés and salads. Cream cheese, double cream, sour cream, mayonnaise, butter, eggs, and lemon juice are common ingredients. Pepper, cayenne, dill, parsley, curry, meat stock (consomme) and avocado are usually added.

Ingredients per 1000g (1 kg) of meat

finely chopped or ground salmon trimmings 125 g 4.4 oz.
heavy cream 75 ml 2 fl. oz.
single cream 30 ml 1 oz.
lemon juice 15 ml 1 Tbsp.
vegetable oil 15 ml 1 Tbsp.
Salt, pepper, pinch of cayenne. to taste to taste

Instructions

  1. In a food processor blend single cream, lemon juice and oil.
  2. Add other ingredients and chopped salmon and blend together.
  3. Place in containers and refrigerate.
