Swedish Potato Sausage (Potatis Korv) is a fresh sausage made with ground pork and beef that is mixed with potatoes, onions, salt and pepper. Most Swedish potatoe sausage recipes include allspice and the proportion of beef and pork vary from 75/50 - 50/50 - 50/75 pork to beef.

 

Swedish Potato Sausage Recipe

 

Ingredients:

 

1 lb pork butt

1 lb beef

1 lb potatoes

1 cup onions, diced

1 Tbs salt (18 g)

½ tsp pepper, ground (black or white)

½ allspice, ground

½ cup water

 

 

 

 

 

 

 

 

Instructions:

1. Grind meats, potatoes and onions through ⅜" plate

2. Mix water with salt, pepper and allspice and mix everything well together

3. Stuff into 36 mm casings

4. The sausage can be fried, baked or boiled. You may place it in a skillet with water to cover, bring it to a boil and then simmer on lower heat for about 20 minutes. Keep the cover on.

This is a fresh sausage and should not be kept in a refrigerator for more than 2 days. If storing longer freeze it.
